Grab 1404 if you prefer the time period, but 1800 is better in terms of gameplay and quality of life. They’re not complicated games in terms of learning curve. They’re very simple. They get complicated by the end game because of the number of resources of trade routes you have to manage, but you build up to that Generally everyone says it's worth it to have and play with all season passes. The season passes are the gameplay DLCs in bundles of 3. The cosmetic DLCs are purely that and are not included in season passes exactly so that you don't have to worry by accidentally wasting money on cosmetics, they are always a separate purchase.
